The holidays are coming and that means extra time spent at meals with family and friends. I really enjoy hosting around the holidays and like cooking for guests. With three kids (and one on the way) I also like finding recipes that are good, hearty holiday meals, but also easy. A meal my family has enjoyed since I was a kid is stuffed peppers. I can remember eating them as a child and my brothers and I would immediately dump the inside of the pepper onto our plates and put the pepper to the side like it was just there for serving the meal. My parents used to always say “your missing the best part” and now, I’d have to agree! Now my kids do the same thing, minus our one green pepper loving kid.
This year, I found an easy, really delicious way to make this “family favorite” meal. I used Clamato Preparado mix to make stuffed peppers. It makes it easy, lighter and really tasty. You’ve probably only thought about Clamato as a drink mix (they do make amazing cocktails!). Clamato can also be a great ingredient for cooking. Clamato’s a great item to keep in your pantry this holiday season because of it’s mixing and cooking versatility. Now for the holiday recipe!
Simple Stuffed Peppers
4 large green peppers
1lb ground beef
1 small onion—chopped
1 cup of white rice (not the instant type)
1.5 cups Clamato Preparado
Wash the peppers, cut the top off and scoop out any seeds. Steam the peppers until they are soft but not over cooked. Cook the rice according to the package. Brown the beef and chopped onion and drain. Once the rice and meat mixture it done mix them together in a pot and add the Clamato Preparado. Shake in a little bit of grated cheese and pepper. Let the mixture simmer for about 5 minutes. Next, scoop the mixture into each pepper and sprinkle grated cheese on top. Bake in the oven at 350 for 20min.
Since the peppers are green, I like to serve them in a red dish. The red and green combo makes the meal even more festive. Enjoy!
