Here’s a recipe that has just 5 ingredients and is fast and easy to make. It’s also an easy Whole 30, Paleo or gluten free dinner idea. This “Sausage, Tomato & Zoodles” is a new weekly meal in our house – mainly because it’s SO easy. It took me a while to get hooked on zucchini noodles. I love pasta and would eat it every night if I could. While we haven’t cut out pasta completely, we try to mostly go with zucchini noodles/ zoodles now.
I realized that when paired with some of our favorite sauces, they really are delicious. We used to make this meal with sausage and cherry tomatoes over pasta and I actually like the meal BETTER with zoodles. Sometimes I spiralize my own (I use this super small, easy to use spiralizer). Often I just buy them already made, because when making dinner in our house: time is a problem. Anything I can do to cut down on meal time prep!
- About 5 links of spicy Italian sausage (uncooked & if you’re making it for a paleo/whole30/ gluten free diet, be sure to read ingredients to determine if they are compliant)
- 2 tablespoons of olive oil
- Sprinkle of pepper
- 1 cup of cherry tomatoes (cut in half)
- 1 pound of zucchini noodles (or about 4 zucchini’s worth)
Grill sausage. While sausage is grilling, sauté zucchini noodles (also known as zoodles) and cherry tomatoes in olive oil. Sprinkle with pepper. Once the sausage is cooked, slice it and serve over the zoodles. Enjoy!
