Caprese Chicken Garlic Rice Bowl

We eat a lot of rice in our house. So when Della Rice asked us to join in their #CreateAStir campaign, we were excited and ready to come up with some “stirs” of our own. What’s a Stir? A Stir is a dinner creation that starts with a bowl of Della rice. Then, the toppings can include a variety of proteins, vegetables, sauces, etc. Check out the bottom of the post for details on how to #CreateAStir of your own for a chance to win some great prizes. For our first Stir, we created a “make your own” fun meal for the whole family. This easy meal was a Taco Rice Bowl, and you can find the recipe here. For our next stir, I wanted to find something easy and healthy I could make as a weeknight meal. My husband and I love caprese salad, so I came up with a way to turn our favorite salad into a rice bowl Stir.

 

Here’s our next Stir: Caprese Chicken Garlic Rice Bowls

Here’s how I created Caprese Chicken Garlic Rice Bowls:

 

Ingredients:

1 cup Jasmine with Roasted Garlic Della Rice

2 Boneless chicken breasts

1 large tomato or 2 medium sized tomatoes

Bunch of fresh basil

1 cup diced fresh mozzarella cheese

Salt & pepper

Directions: 

1. Cook the chicken – I prefer to cook the chicken in the slow cooker for this recipe. Then I can have it cook all day and it’s ready to go when we make the rice bowls. I just put the chicken in the crock pot with some water, onion and salt & pepper. When it’s cooked, shred it/ break it up.

2. Cook the Della Rice. We recently started using a rice cooker and I highly recommend! It cooks the rice perfectly with very little effort.

3. Dice the tomato, mozzarella and basil. Place the cooked rice at the bottom of individual bowls, layer with chicken, tomato, mozzarella and basil. Sprinkle with salt & pepper to taste. Enjoy!
