Easy Easter Breakfast: Easter Bunny Pancakes

Here comes Peter Cottontail, hopping down the bunny trail..hippity, hoppity, Easter’s on it’s way…. If your little bunnies are getting excited for Easter, they’re going to love these super easy Easter Bunny pancakes. This is an easy Easter breakfast idea and can even be used for a class Easter party.

Easter Bunny Pancakes

I ordered this Easter cookie cutter set from Amazon. These are fun to use for baking, playdough or tracing crafts. The tall bunny looked like a good shape for pancakes that might “stand up” like bunnies. Then I made pancake batter as usual and when I poured the pancakes, tried my best to make long skinny pancakes, just a bit bigger than the cookie cutter. You want the batter on the thicker side to make the pancakes thicker. Otherwise, they won’t stand up so well. Once the pancakes were done, I used the cookie cutter to make to bunny shape. What to do with the excess? I am not one to waste, so the “pancake” scraps went to my husband and I who would not be disappointed by non-bunny shaped pancakes 🙂

It’s cute to serve in an egg carton since. It’s a festive, easy way to see the bunnies and makes for a great syrup spot too. You could cut an egg carton. With all the egg dying around Easter, you’re sure to have plenty of those lying around! I had this ceramic one from Anthropologie that I found for $12 on Nordstrom.com and I’ve seen them on Amazon too. We eat a lot of hard boiled eggs, and I use this to let them cool and serve.
