Easy Meal Ideas for Back to School Season

Back to School means back to a schedule around here. So it’s time to share some easy meal ideas! Our summers are filled with long days at the pool, travel and fun. We eat out more in the summer and are not home very much. When school starts that all changes.

All 5 kids will be in school this year and will also be in many sports and activities. Easy, meals are key. I like having foods that aren’t just quick snacks – I like foods that will fill them up and fuel their active lives. I also like to make sure we sit down to eat together so sometimes that means quicker/ easier meal ideas so we can get to the table faster. 

Over the last week I tried out a bunch of different new foods and meal ideas. Hopefully these easy meal ideas help your back to school adjustment and make life a little easier. 

Easy Meal Ideas

1. Jus Rol Pizza Night 

I have never been very good at making my own pizza… and then I found Jus Rol.  Jus-Rol makes it easy to prepare impressive appetizers, entrees, and desserts. It comes rolled on baking paper for simple prep and easy clean up. I love the Jus Rol Family Size Pizza Crust. It comes on the baking paper so you just roll it onto a baking sheet. I add our favorite ingredients and it’s ready in under 20 min.

2. Easy Kid Friendly Chicken & Broccoli Rice Stir Fry 

My kids love this and it’s SO easy. All I use is: frozen broccoli, a chicken breast diced up that I season with pepper and cook in olive oil on the stove (dicing it up first helps it cook fast and then you just toss it into the rice when it’s done) and Minute’s Chicken & Herb Seasoned Rice Cups. 

I cook the rice, broccoli and chicken, toss it all together and dinner is ready in minutes. 

Minute Rice Cups are also a fast and easy mealtime idea on their own, great for lunches or if your meal needs a quick side. The cups are BPA-free and 100% recyclable.

3. Easy Make Your Own Crepe Night 

I recently tried 2 Farin’UP products and love them so much I went on their site to order more. They are beyond easy and so delicious.  Farin’UP sells natural baking & breakfast mixes. You can get them at Publix, Stop & Shop, Giant, Safeway, United, Central Market, Lowes, on Amazon and their website. Here’s what we’ve tried so far from Farin’UP

Farin’UP French Crepes Mix:
All you do is add milk to the mix and you have crepes in under 5 min. The package is resealable which is great too. Then I set up a little crepe making station with fruits and spreads. The kids love this! 

4. No Bake Easy Protein Balls

So this isn’t really a meal idea BUT if your kids are like mine… come school & sports season they are never full from 3 meals a day. So a good protein filled snack is key. The Farin’UP mix is SO easy. You add a little water and honey and they’re all set in minutes. They are plant based & gluten free.
