Easy Pumpkin Spice Cookies

Last week I called Julie to tell her it felt like Christmas in my house. That’s because I was baking cookies from scratch. I only do that once a year: at Christmas. But, lately all the girls want to do is cook. Maggie sits at the crock pot each afternoon & carefully adds all of the ingredients. I let them make instant pudding on their own & their excitement was awesome. I decided we need to bake more.  We’ve had the mixer out for days. This is our best creation so far:

Pumpkin Spice Cookie Recipe : The Chirping Moms
Easy Pumpkin Spice Cookies


Ingredients:

2 Cups Flour

1/2 Teaspoon Baking Soda

1 Teaspoon Baking Powder

1 Teaspoon Cinnamon

1/2 Teaspoon Salt

1/2 Teaspoon Allspice

1 Cup Butter

1 Cup Sugar

1 Can of Pumpkin – I really like the Trader Joes pumpkin

1 Egg

1 Teaspoon Vanilla

Candy Corn


Directions: 

Preheat oven to 350 degrees. Combine the flour, baking soda, baking powder, cinnamon, salt & allspice in a bowl. With an electric mixer, cream the butter & sugar. Add the pumpkin, egg & vanilla. Add in the dry ingredients, a little bit at a time. When everything is mixed, drop cookies onto cookie sheet. Bake for 15 minutes. When they come out, move to cooking rack & push candy corn into center of the cookie. Enjoy!

Tip for baking with 2 kids: Break everything in half. Instead of dumping in 1 cup of sugar, do 1/2 a cup at a time. This makes for more ingredients & a longer activity for the little ones.
