Easy Weeknight Summer Meals

Everyone is always excited for summer and eating outdoors, grilling, etc but you can quickly run out of meal ideas. By late June the sound of burgers and hotdogs for dinner loses it’s exciting ring! Today I’m sharing some easy weeknight summer meals that will help switch up your regular summer grilling. These are all easy to make, no long recipes to follow and many ingredients you probably have on hand.

All three of these easy weeknight summer meals include burgers but switched up a bit and with fun, simple sides. One way I simplify summer meals is having some BUBBA burgers in the freezer. In the beginning of the summer, I stock up and store BUBBA burgers in our freezer. Then, when it’s time for dinner, they go right from the freezer to the grill and are ready in about 10 minutes. There’s no thawing needed so it’s super convenient. Enjoy quality time in no time with BUBBA burgers.

Easy Weeknight Summer Meals

Bacon, Cheddar, Avocado Burgers with Black Bean & Corn Salad

Ingredients: 
BUBBA Burgers 
Rolls
Sliced cheddar cheese 
Bacon, cooked
Avocado, sliced
1 can black beans, rinsed 
Corn from 2 cobs, cooked
1/2 lemon
3 tablespoons olive oil
Cilantro
Orange or yellow pepper, diced
Tomato, diced 
Salt & Pepper 
 

Directions for Black Bean & Corn Salad: Mix the black beans, corn, diced pepper and diced tomatoes in a bowl. Squeeze half a lemon over the salad and add the olive oil. Add salt & pepper and mix well. Last add in some chopped cilantro (to taste). 

Tomato, Basil, Mozzarella Burgers with Cucumber & Tomato Salad 

Ingredients: 
BUBBA Burgers 
Rolls 
Fresh mozzarella cheese 
Sliced tomatoes 
Fresh Basil
3 cucumbers, diced
1 cup diced tomatoes 
1/4 cup olive oil 
1/4 cup red wine vinegar
salt 
pepper 
 
Directions for Cucumber & Tomato Salad: Peel and dice the cucumber, dice the tomatoes and place both in a bowl. Add the olive oil and red wine vinegar. Stir. Add salt and pepper and stir. Enjoy!
 

Skip the Bun! Summer Salad with Burger 

Ingredients: 

BUBBA Burgers 

Mixed Greens

Crumbled feta

Sliced strawberries

Cucumbers

Diced watermelon 

Make your summer salad and serve with a BUBBA burger as the protein. I added some garlic bread on the side and for the kids: burger + strawberries + watermelon.

One thing I really love about these easy weeknight summer meals is that they feel flexible and realistic for busy families. You can easily swap ingredients based on what you already have at home, add fresh produce from a local farmer’s market, or let everyone customize their own burger toppings and sides. That’s honestly one of my favorite ways to make summer dinners easier with kids — keeping things simple but still making them feel fun. A few easy sides, fresh fruit, and burgers on the grill can go a long way toward creating a meal everyone actually enjoys.

Summer always feels short, and I never want to spend it stressed in the kitchen or following complicated recipes. Having a few simple meal ideas ready to go — especially ones that can be made quickly outdoors — makes those long summer evenings so much more enjoyable. These easy weeknight summer meals are perfect for busy nights, casual get-togethers, or anytime you want a low-stress dinner that still feels fresh and delicious.
