Mini Lemon Icebox Pies

This week, the kids & I headed south to visit my family in North Carolina for spring break!  There’s something about leaving the busy city environment & arriving in the south that allows me to sit back, pour a nice glass of sweet tea, and just relax.  We are loving the unstructured & free schedule to just play and have time to just be with our family.  When we get together, our family always gathers around lots of food, and of course, our go to drink of Pure Leaf Sweet Tea.  One of my favorite things to do with my mom is to hang out in the kitchen with her as she prepares food for our family gatherings.  My mom is an amazing cook, seriously.  She knows how to cook just about anything & growing up in the south, she adds some true southern flair to her cooking.  I envy her cooking skills and now when I get to spend time with her, I love for her to teach me just a few of her many skills.  Earlier this week, we decided to make a super easy version of one of my favorite kinds of pies, a lemon icebox pie.      We came up with these fun mini lemon icebox pies that require minimal preparation, but still give the delicious lemon flavor that I love.

Mini Lemon Icebox Pies

Ingredients:

  • 12 Ready Crust Mini Graham Cracker Crusts
  • 2 cans of sweetened condensed milk
  • 1 cup of lemon juice
  • 1 T. of lemon zest
  • 1/2 container of an 8 ounce Cool Whip container
Directions:
1.  Line the crusts in their individual pans onto a cookie sheet.
2.  Whisk the sweetened condensed milk & lemon juice together with a wire whisk.  Let sit for 15-30 minutes to thicken.
3.  Mix Cool Whip with a spoon.
4.  Spoon lemon mixture into the graham cracker crusts.  
5.  Place in refrigerator to cool.
6.  When ready to serve, add whipped cream for topping. (if desired)

This mini lemon icebox pie & Lipton Pure Leaf Iced Tea are the perfect southern afternoon pick-me-up!  The sweet tea is the perfect complement to the tart lemon flavor in the mini pies.  You can keep it covered in the refrigerator for several days, if they will last that long!  This super simple recipe would be a great dessert for summer potlucks & barbecues.
