Simple Weeknight Recipe: Mushroom Chicken & Rice

My mom always made this recipe when we were growing up. It was a family favorite. I recently asked my mom how she used to make “that really good chicken and rice meal” and I was surprised how easy it was. You can use chicken pieces or boneless chicken for this. This is a great weeknight meal. It’s so easy to make and it’s super easy clean up after dinner.
Recipe: Mushroom Chicken and Rice
Ingredients: 
4-6 pieces of chicken
Onion soup dry mix packet
Can of cream of mushroom soup
1 cup of milk
1 cup of uncooked rice
1 -2 cups of fresh sliced mushrooms (optional)
Directions:
Pre-heat oven to 375. In a bowl, mix the can of soup, half of the onion soup mix packet, milk and cup of rice. Stir well. Add in the sliced mushrooms and stir. Pour half of the mixture into an oven safe  casserole dish. Place the uncooked chicken into the dish. Pour the remaining mixture over the chicken. Top with the other half of the onion soup mix packet. Cover with foil and bake for 45-60 min or when the chicken is cooked through. Enjoy!
