Two Summer Favorites

My Aunt P has some wonderful recipes. Some of my favorites are her summer recipes. When her kids were growing up, they had a pool, which always meant lots of pool parties & bbqs. Now she has a beach house, which means even more bbqs! So, as long as I can remember, Aunt P has been entertaining outside. Below are two of my absolute favorites. I have been enjoying them for years & I was pretty surprised at how easy these delicious summer recipes are! Enjoy.

Summer Spaghetti
Ingredients:
Chicken, 1lb spaghetti, soy sauce, sesame seeds & a green bell pepper

Dice & cook chicken on stove (or grill chicken & dice)
Cook spaghetti
Dice pepper
Mix everything in a bowl, sprinkle with sesame seeds & add soy sauce to taste
Chill & serve.

Aunt P’s Pasta Salad
1lb ditalini pasta, Paul Newman’s balsamic vinegrette, green pepper, tomato, diced black olives

Cook pasta
Dice pepper & tomato
Mix everything in a bowl with dressing & chill

Other things I add: small cubes of mozzerella cheese & canned sweet corn

I also make it with pasta, tomato, cheese & blueberries for 4th of July!
