Choosing the Healthy Choice!

Before I had kids, I envisioned my life as a stay at home mom with homemade, nutritious lunches for both the little ones and myself!  Fast forward to lunchtime in our house most days.  One son gets home from preschool eager for food on the table.  My two year old is approaching nap time and moods are getting irritable by the moment and now we have a baby who may or may not be waking up any moment waiting for her belly to be filled!  

I am quickly preparing lunch for my little ones, often consisting of toddler favorites:  sandwiches, mac and cheese, soup, or leftovers from last night dinner!  Then,  I scramble to get the middle child down for his nap and the baby to be fed all while keeping the four year old entertained.  Finally, and I mean FINALLY, I have a moment to sit down and enjoy my own lunch!  

When I finally have to time to eat my own lunch, I am looking for quick and nutritious meals to prepare.  My go-to meals as a stay at home mom are leftovers, sandwiches,  salads, and frozen meals.  My oldest sister, Jill, introduced me to the world of frozen meals when I first started my teaching career!  I needed some quick and delicious meals that also were nutritious and satisfying and she suggested frozen meals that would help bring variety to my mid-day meal.  

 

 

I love the original and unique meal options that Healthy Choice and Marie Callender’s carry.  There are so many options at the grocery store to choose from, including several pasta options, Asian-Inspired meals, and traditional complete meals.  Some of the delicious options that I found were:  Pineapple Chicken, Italian Sausage Pasta Bake, and Classic Meatloaf.  Being a Top Chef junkie, I love the Top Chef options that Healthy Choice provides, such as the Chicken Margherita with Balsamic meal that I tried for the first time yesterday.  What do I love about this meal?  

It’s the perfect size for lunch, making it easy to control my portions as I am on my way to regaining my pre-baby body!  Healthy Choice meals are perfect for moms who are busy, but also trying to eat nutritious  meals during the day.  I love that most of the Healthy Choice meals contain less than 400 calories and help me control my portions during lunch.  The Chicken Margherita meal contained 310 calories, perfect for a mid-day meal. 

   

It is flavorful and packed with lots of fresh ingredients.  I always have a hard time eating my fill of vegetables during the day and I love how many of the Healthy Choice meals have at least one serving of vegetables that I can include in my daily count.  The vegetables in these meals are picked at the peak of freshness, bringing fresh and delicious flavors to the convenience of frozen foods!  Many frozen food meal options lack flavor, but not Healthy Choice and Conagra Foods meals.  

   

It is super simple to make the meal!  For the Chicken Margherita meal, I just popped it in the microwave for four minutes. It cooked in a steamer basket.  

Noodles and chicken were cooked perfectly and then I just poured the meal into the sauce bowl below.   With three kids four and under, I already am eager to try some more flavorful Healthy Choice meals to help make simple and convenient meals for this busy mama!

If you are at the store looking for some fast, delicious, and flavorful meals, choose the Healthy Choice.  You will not be disappointed!

    Cool story: one of my friends from college in my major works for ConAgra and has helped launch several of those meals.

    Yes, Mom always eats on the go, frozen, left over, and with little hands asking for some of it 🙂 I will have to try these meals. Thanks for sharing 🙂
