Family Favorite Dinner Recipe: Vegetable Beef Soup

It may still feel like summer outside, but I can still feel fall coming.  With the kids heading back to school and our afternoons becoming busier, it’s time to break out some of my easy and delicious dinners.  Tonight, I am sharing one of our family favorites: Vegetable Beef Soup.  My kids love soups & this is one of their favorites because it has simple flavors.  It’s super easy because you can do a lot of the prep work earlier in the day and then make the soup while the kids are doing homework or playing outside.
Vegetable Beef Soup Recipe || The Chirping Moms



Vegetable Beef Soup

Ingredients:
  • 1 pound of ground beef
  • 1 chopped small yellow onion
  • 1 large can of diced tomatoes
  • 4-8 cups of vegetable stock (depending on how much liquid you like!)
  • 3-5 potatoes, diced
  • 1 cup of celery, chopped
  • 1 bag of baby carrots, sliced
  • 1 1/2 cups frozen peas
  • 1 1/2 cups frozen corn
Directions:  
1.  Brown the ground beef in a large stock pot with the onion.
2.  Add the can of crushed tomatoes and vegetable stock.
3.  Cook for about 30 minutes on low.
4.  Add potatoes, celery, & carrots.  Cook on low for about 30 minutes until tender.
5.  Add peas and corn, with salt and pepper to taste.  Cook on low for another 10-20 minutes.
6.  Serve with warm bread or soup crackers.
