Friday Favorites: Easy Crock Pot Chicken

Since having kids, i’m not great with making shopping lists or following recipes. My shopping trips are a little hectic & I tend to get home with a random assortment half the time. Anyway, our small pantry was starting to fill up with cans of food I buy & forgot why I did. So, lately, I’ve been trying new crock pot recipes using what’s in the pantry. A few weeks ago I came up with this recipe. We loved it! I’ve made it two more times to make sure it wasn’t a fluke. This is a new favorite in our house & it’s easy & healthy. You could make it healthier by going with low sodium chicken broth or just use water. 
It’s just a few ingredients & takes just a few minutes to prepare. 
Crock Pot Chicken & Diced Tomatoes
Ingredients:
Uncooked Boneless Chicken Breasts
1 Cup Chicken Broth
1 Cup Water
Pepper
A few whole garlic cloves
1 onion peeled & cut in half
1 Can Diced Tomatoes with Italian Seasoning. 
If you have a regular can of diced tomatoes, you could just add some italian seasonings in instead.’
Directions: Add all ingredients to the crock pot & cook on high for about 4 hrs. I serve the chicken with a scoop of the diced tomatoes on top! It’s great over pasta or with a side of couscous.

    Yum, so simple, so fun. I love it. πŸ™‚ I will substitute kidney beans for the chicken as we are a (mostly) meatless family.

    I can relate all too well about the random ingredients that I come home with after shopping with kids. Somehow I never have everything for a whole recipe! Glad I'm not the only one!
