Today, we are sharing some super easy & kid-friendly Easter brunch recipes.  Nothing makes Easter morning like a good home-cooked Easter brunch!

Overnight Easter Egg Bake

This is an easy, delicious recipe you can make the night before and just pop in the oven Easter morning.

Easter Egg Bake Recipe || The Chirping Moms

Ingredients:

1 lb of ground sweet or hot Italian sausage (I do sweet so the kids eat it, but it’s also great with hot sausage!)

1 bag of shredded cheddar cheese, about 2 cups

2 cups of shredded hash browns (they come frozen)

1 onion chopped

1 green pepper chopped

Other veggies can be added too: broccoli, mushrooms, red peppers, etc

About 1 cup of chopped tomatoes

1 dozen eggs

2 cups of milk

Sprinkle of black pepper, oregano and basil

Directions:

Night before Easter: In a skillet, cook the sausage and chopped onions. Once cooked through, drain the liquid. In a bowl whisk the eggs, milk, 1 cup of shredded cheese, black pepper, basil & oregano.

Spray a 9 X 13 pan with cooking spray. Layer: hash browns (do not thaw), the sausage/ onion mix, 1 cup of shredded cheese & veggies. Pour the egg mix on top. Cover and refrigerate.

Easter morning: Preheat oven to 375F. Bake for 1 hour or until heated through.

Easter Bunny Tail Cake

For a fun family friendly Easter dessert, try the Easter Bunny Tail cake!

Ingredients:

1 cake mix of choice

Frosting flavor of choice

Sprinkles

Marshmallows

Directions:

With preferred flavor of cake mix, make a 9 inch cake & 12 cupcakes.  Let cool out of pan.  Put a quick spreading of icing down on the round cake.  Unwrap a cupcake for the tail.  Spread icing around the whole cupcake and dip in sprinkles.  Put in the middle of the cake.  Take two cupcakes & unwrap for the feet.  Stick them on cake.  Frost the whole cake, including the feet, to look like a bunny.  To make the paws, put frosting on the bottom of a marshmallow and dip in sprinkles then put on the cake.  Repeat to make bunny paws.  My kids loved making this super easy Easter cake, completely from the boxed mix & all!
