Mini Mexican Pizzas

School has started & that means another one of our favorite traditions is back into gear…Friday Pizza Night.  Every Friday night, we gather together as a family for a relaxing night of family fun night & a simple pizza dinner.  It’s something we look forward to each week is a kind of a celebration for the end of another busy week in our wild and crazy household.  Some Fridays, we order pizza and other Fridays, we make our own pizzas.  I like to mix it up so we don’t eat the same pizza dinner every Friday night.  Today, I wanted to share a fun and easy twist that we put on pizza night last week:  Build Your Own Mini Mexican Pizzas.

With four kids eating dinner, it’s sometimes hard to find a meal that everyone will eat.  For some reason, Mexican food seems to always be a winner.  So when I was planning out our menu for last week, I combined our love for Mexican food with our traditional pizza night & created this simple dinner idea: Mini Mexican Pizzas.  This dinner was an instant hit in our house.  The kids loved the Mexican twist on pizza night.  They also loved that they could help in the kitchen by building their own pizzas.  We used corn tortillas for our crust & enchilada sauce for the pizza sauce.  Then the kids added some of their favorite taco toppings to create these mini pizzas.

Of course, there was cheese (lots of cheese!).  I also put out some of their favorite vegetables: cherry tomatoes & green peppers.  Olives was a hit with the adults.  And for proteins, we decided on taco meat and canned pinto beans.  A couple of my kids aren’t huge meat eaters, so we always have canned beans in our house to substitute in place of meat when possible.  Canned beans are easy to use and are a great source of protein for my family.  One brand that I use often in our house is Luck’s.  Their canned pinto beans are different than other canned beans because they have a little more flavor, thanks to the fact that they are seasoned with a taste of pork.  This little extra flavor makes Luck’s canned beans stand out compared to other brands that we have tried in the past.

This recipe is super simple to make & is perfect for any weeknight dinner.  All you need are corn tortillas, a can of enchilada sauce, taco meat and canned beans, and all of your favorite taco toppings.  Below, I am sharing a step by step direction on creating Build Your Own Mini Mexican Pizzas.

Mini Mexican Pizzas

Ingredients:

  • Corn Tortillas
  • Olive Oil
  • Kosher Salt
  • Can of Enchilada Sauce
  • Can of Luck’s Pinto Beans
  • 1 pound of Ground Beef
  • Taco Seasoning
  • 1 package of cheddar cheese
  • Assorted Toppings: cherry tomatoes, green peppers, olives, etc.

Directions:

1. Prepare the crust  for the Mini Mexican Pizzas.  Instead of using pizza dough, I decided to use corn tortillas.  First, preheat the oven to 400 degrees.  Spread the corn tortillas out on a foil-lined baking sheet.  I could fit about six tortillas per pan.  (We made one for each kid & two for each of us.)  Brush lightly with the olive oil and lightly sprinkle with the kosher salt.  Bake in the oven for approximately four minutes on each side.  Take out & let cool for 1-2 minutes before adding the sauce.

2. Now, it’s time for some Mexican pizza sauce.  Instead of using tomato based pizza sauce, I used enchilada sauce.  Spread the sauce on each corn tortilla.

3. Next, add the protein.  We use a combination of meat & pinto beans on our Mini Mexican pizzas.

4.   Add some cheese.

5.  Last, add the toppings.

6.  Bake in an oven that is set to broil until the cheese is nice and toasty.  For our oven, this takes just about a minute but watch closely so it doesn’t burn.

    That pizza looks so delicious! It definitely doesn’t help with that fact that I didn’t eat lunch yet and it’s going on 1:30. I am a vegan but I still love finding recipes where I can just swap out the meat for another form vegan-friendly protein! I love me some beans so I could just add a second helping of that 😀 Hello weekday dinner, let’s be friends!!
