No-Bake Monster Cookie Bites

One of my children is turning into a little Cookie Monster.  Every time I turn around, he is trying to sneak cookies out of the pantry.  So one afternoon, I decided it was time to create a slightly healthier alternative to the cookies sitting in the pantry.  After looking online for a fun recipe, I liked the idea of the “energy bites” on Pinterest but honestly, we don’t have any of the healthier ingredients that many of them call for in our pantry: flax seed,  chia seeds, protein powder, etc.  So using what I had in my pantry, we created a Monster Cookie & energy bite combination to create: No-Bake Monster Cookie Bites.  

No-Bake Monster Cookie Bites ||  The Chirping Moms


Monster Cookie No-Bake Bites

Ingredients:  

  • 1 Cup of Oatmeal
  • 1/2 Cup of Rice Krispies
  • 1/2 Cup of Pecans
  • 1/2 Cup of Peanut Butter
  • 1/3 Cup of Honey
  • 1/4 Cup of Chocolate Chips
  • 1/4 Cup of M & M’s
  • 1 Tsp of Vanilla
Directions:
1.  Put pecans in food processor & chop finely to small pieces.
2.  In a large bowl, add oatmeal, Rice Krispies, pecans, peanut butter, honey, & vanilla.  Stir together. Add chocolate chips and M & M’s so it forms a nice solid ball of dough.
3.  Place in refrigerator for 20-30 minutes to chill.
4.  Scoop in small balls & eat.
(It will keep in airtight container in refrigerator for several days and stay delicious!)

These bites are super easy & super delicious.  I have been eating them must as much as my kids!  I’m trying to eat less dessert at night, so this is my new alternative to the ice cream in the freezer or the brownie mix in the cupboard!  My kids are loving them and they make a great after school snack, served with a little fruit & milk!
