Simple Family Dinner: Chicken Tetrazzini

March 2, 2013

I am sharing a recipe for Chicken Tetrazzini today with you all.  I love how it uses chicken that is cooked in the Crock-Pot, nothing better than putting the chicken breasts in before we head out in the morning and it’s all ready by late afternoon.  A Crock-Pot is a MUST in our house!  The other ingredients are simple and anything with noodles, my kids will eat.  Read below for the recipe:

Chicken Tetrazzini
Ingredients:
  • 1 pound of chicken breasts
  • 1 package of spaghetti noodles
  • 3 tablespoons of butter
  • 1/2 pound of mushrooms
  • 2 tablespoons of flour
  • 1/4-3/4 cup of chicken broth
  • 1 cup of milk
  • 1 cup cheddar cheese
  • 1/4 cup of parmesan cheese
  • 1-2 cups cheddar cheese
Directions:
First, you have to cook the chicken in the crock pot all day!
1.  Cook spaghetti noodles (about 3/4 package) following directions on the box.
2.  While noodles are boiling, make the sauce:  Saute mushrooms in the butter until cooked.  Whisk in flour.  Add chicken broth and milk.  Add cheddar cheese and parmesan cheese.  Stir to smooth sauce.
3.  In a 13 x 9 pan, add noodles, chopped chicken, and sauce.  Top with more shredded cheddar cheese.
4.  Bake at 350 degrees for 35-45 minutes.

Hope you enjoy this yummy and delicious dinner!
