Recipe Guest Post: Strawberry Cookie Pie

Remember a few months ago when I shared our Disney World vacation? I talked about a friend who I call a “Disney Pro”, that was a tremendous help in planning our trip. Ali, that same friend, is also a fantastic cook and party planner. She’s creative and a really fun mom to be around. I asked her to share one of her fun summer recipes on the blog today. She’s sharing her Strawberry Cookie Pie, which would be a perfect addition to any 4th of July event you’re heading to. Enjoy! 


Strawberry Cookie Pie

Ingredients: 

  • Ready-made refrigerated sugar cookie
  • 1/2 cup confectioners sugar
  • 2 tsp granulated sugar
  • 8oz cream cheese (softened)
  • 1 tbsp lemon juice
  • 1 quart strawberries
  • 1 container of strawberry glaze (I use Marie’s)
Directions: 

Spread out one package of ready-made refrigerated sugar cookie onto a disposable pizza pan.  Bake for 8-10 minutes.  Cool completely.  

Mix together: confectioners sugar, granulated sugar, cream cheese and lemon juice.  Spread on top of cookie base.  Mix fresh strawberries container of strawberry glaze.  Spread on top of cream cheese mixture.  

Keep refrigerated until you’re ready to enjoy!
