This past weekend, we decided to skip the laundry that usually gets done on Sunday and spend the day together as a family. We packed the car after church, grabbed some coffees for my husband & me, and hit the drive-thru for lunch for the kids. We headed towards the countryside for some much needed family time. Our destination…a small little farm to pick strawberries. The kids had a blast running through the fields, trying to find the perfect berries to fill their basket. We enjoyed some fresh air, ripe strawberries, and a beautiful view of the mountains. And most of all, we enjoyed spending quality time together away from the busy moments of day to day life with four kids.
Since arriving home, the kids have been eating fresh strawberries for breakfast, lunch, and dinner. With a huge box of strawberries, the kids and I have had fun planning and executing a variety of recipes this week into our menu. One night, we enjoyed a fresh strawberry & chicken salad for dinner. We put together a strawberry lemon cake for my grandma another day. And the kids have several other ideas planned to make this weekend, including some fresh strawberry muffins and chocolate covered strawberries.
One of my favorite recipes was one that we shared together after school this week. Every once in awhile, I like to turn our after school snack time into a fun activity for the kids. The kids come home to a table full of all the ingredients needed to put their snack together and their favorite juice boxes. We can sit around the table together, making our snack and talking about their day at school. This time together is a great way to just decompress from the day and enjoy a special little treat together. The kids enjoy making their own snack & love the “special snack” that I put out. I love catching up about their days before the evening madness begins: sport practices, dinner and dishes, etc.
Today, I am excited to share a fun new recipe that we enjoyed this week with our freshly picked strawberries: Strawberry Greek Yogurt Waffle Cone Parfaits. This recipe is kid-friendly, easy to make, and delicious. All you need for this special after school treat is the greek yogurt mixture (shared in the recipe below), fresh cut strawberries, waffle cones, & Juicy Juice juice boxes.
Strawberry Greek Yogurt Waffle Cone Parfaits
- 1 container of Cool Whip
- 2 containers of single serving Strawberry Greek Yogurt
- Fresh Cut Strawberries
- Waffle Cones
Mix the Cool Whip and Yogurt together in a bowl. Layer the whipped mixture and strawberries into a waffle cone to make a parfait. Serve with Juicy Juice juice boxes.
