The Chirping Moms

2 Delicious Valentine’s Day Dessert Recipe Ideas!

January 14, 2014

It’s Valentine’s Week at The Chirping Moms! To keep up with all the Valentine posts this year, make sure to check out our seasonal tab.  We will also be sharing some of our favorite ideas on our The Chirping Moms Pinterest boards here.

Valentine Dessert : The Chirping Moms

Chocolate Cream Cheese Cupcakes

Ingredients:

(For the chocolate cake batter)

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/4 cup cocoa
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup water
  • 1/2 cup oil
  • 1 tsp. vanilla
  • 1 tbsp. vinegar
(For the cream cheese topping)
  •  8 ounce package of cream cheese
  • 1 egg
  • 1/3 cup sugar
  • 1/8 tsp. salt
  • 12 ounce package of mini chocolate chips
  • (Optional):  For a special Valentine twist, I added some red food coloring!
Directions:

Preheat oven to 350 degrees.  In one bowl, mix all the ingredients for the chocolate cake batter.  In a separate bowl, using a mixer, beat the ingredients for the cream cheese topping.  Line mini muffin tins with paper muffin wrappers.  Fill each muffin wrapper halfway with the chocolate cake batter.  Add 1 1/2 tsp. of the cream cheese mixture to each mini muffin.  Bake for 15 to 20 minutes.  Remove from pans and cool immediately.  Enjoy!

Valentine Dessert : The Chirping Moms
Mint Chocolate Chip Crock-pot Brownies

Ingredients:
4 eggs
2/3 cup oil
1 tablespoon vanilla extract
1.5 cups sugar
1.5 cups of flour
1 cup cocoa
2 pinches kosher salt
1 teaspoon baking powder
3/4 Nestle Toll House Dark Chocolate and Mint Baking Chips
* You can use regular chocolate chips if you want plain brownies instead of Mint Chocolate Chip Brownies
Directions:
Use 2 pieces of foil to line the crockpot. Place one piece in the crockpot & then the other piece in the other direction in a “T” shape. Coat the foil with cooking spray.
Combine 1st 3 ingredients (the wet ingredients) in a bowl and mix well.
Then combine the dry ingredients in another bowl. Mix all the ingredients together & then add the chips. Mix again. Spread batter into the crock pot. Cook on high for 2-3 hours or until brownies are done (a toothpick comes out clean). Pull out the foil “sling” & flatten. Once cool, cut the brownies & enjoy!

Another easy and perfect dessert for a Valentine’s dinner-in would be brownie pudding, featured in last year’s Valentine week!
