3 New Recipes: Pizza Rolls, Sausage Pasta, & Ham and Pickle Rollups!

This weekend, I had a chance to do something that every mom envies…
Grocery shopping ALONE!  No baby girl grabbing my list.  No toddler trying to pretend the big car cart is his own personal fire truck.  No preschooler trying to add juice boxes, candy bars, or boxes of crackers to my cart.  It’s funny how life changes when you have kids.  Grocery shopping solo is euphoric.  I can browse up and down the aisles and check out the new products on the shelves.  I can actually try to shop the deals and use coupons.  I can finish my trip with a nice cup of coffee from the drive through all by myself before returning home to a frazzled husband and three non-stop moving children.
The main thing that helps me grocery shop is creating the “list”.  This process is no easy thing.  I spend an hour or two of my week, browsing through the store ads and planning my meals around what’s on sale that week.  My planned meals have to be easy to make and have a short amount of prep time.  My husband often works late, so I am flying solo when dinnertime arrives.  I admit that I do like to cook, but cooking during the “witching hour” brings a whole other meaning to it.  Dinners have to be quick, easy, and appealing to little ones.    
When I head to the store, I am one of those people who stick to my list.  This week, I headed over to our local Safeway to try out their “Just for U” app, an easy way to save money without cutting coupons.  One of the deals featured this week on the “Just for U” program is that you can save $3 when you buy 3 Hillshire Farm products, so of course I took advantage of this great deal because I had some major cooking to do this weekend because we had family visiting from out of town!

When we have company, I always like to try out new recipes.  (Probably not the best time to try out new things if they turn out terrible, but I enjoy having extra hands to watch the kids which means more time for me to cook!)  The first recipe, Stuffed Lil’ Smokies Pizza Bites, brings my husband’s love for Lil’ Smokies with my love for Pizza Rolls!  It is easy to create and would be perfect for a game day appetizer this football season.
Stuffed Lil' Smokies Pizza Bites : The Chirping Moms

Appetizer Recipe:  Stuffed Lil’ Smokies Pizza Bites

Ingredients:

  • One Package (16 oz) of Hillshire Farm Lil’ Smokies Cocktail Links
  • 1/2 Bottle (18 oz) of Barbecue Sauce
  • 1/4 Cup of Ketchup
  • 1/2 Tablespoon of Worcestershire Sauce
  • 1 Refrigerated Pizza Crust
  • 1/2 Package of Shredded Monterey Jack Cheese
  • Dash of Olive Oil
  • Sprinkling of Italian Seasoning or Garlic Salt
Directions:  
  1. Put the Lil’ Smokies, barbecue sauce, ketchup, and worcestershire sauce in a Crock-Pot.  Cook on low for two hours or until ready to use.
  2. When ready to prepare the pizza bites, preheat oven to 400 degrees.
  3. Unroll the refrigerated pizza crust and cut into twelve squares.
  4. Cut the Lil’ Smokies into small, bite-sized pieces.
  5. On each pizza crust square, place approximately 3-5 Lil’ Smokies bites, a small amount of monterey jack cheese, and a small spoonful of sauce from the Crock-Pot.
  6. Roll the sides of the square up to make a little stuffed “pizza ball”.
  7. Place in a greased round pan.
  8. Continue the process until all 12 pizza rolls are in pan.
  9. Brush the tops of the pizza rolls with olive oil.
  10. Sprinkle the tops with Italian seasoning or garlic salt.
  11. Bake in the oven for approximately 15-20 minutes or until golden brown.
  12. Serve with barbecue sauce for dipping.
Lil Smokies Pizza Bites : The Chirping Moms
When I lived in New Jersey, I was introduced to the world of sausage and peppers.  I fell in love with a hoagie stuffed with delicious cooked sausage and peppers.  Seriously, add it to your bucket list.  Go to a street fair in New Jersey and get a Sausage and Peppers sandwich.  A-M-A-Z-I-N-G!  So I modified one of my favorites to share with you today.  I made a Kielbasa Sausage and Peppers Pasta to share with you.  My kids have been on a huge pasta kick and if I put something on noodles, they eat it.  So I combined my love for sausage and peppers with my kids’ love of pasta to create this easy dish!
Sausage & Peppers Pasta : The Chirping Moms

Dinner Recipe:  Kielbasa Sausage and Peppers Pasta

Ingredients:

  • 1 large package of Hillshire Farm Polka Kielbasa
  • 1 yellow onion
  • 1 red pepper
  • 1 orange pepper
  • 1 yellow pepper
  • 2 (8 oz.) cans of tomato sauce
  • 1 box of rotini pasta
  • 1 package of shredded parmesan cheese
Directions:
  1. Preheat oven to 350 degrees.
  2. Slice the kielbasa sausage 1/4 inch slices.  Saute kielbasa sausage in a pan with a little olive oil until slightly browned.
  3. Slice the peppers and onions.
  4. In a 13 x 9 pan, mix the kielbasa sausage, peppers, onions, and 2 cans of tomato sauce.  Cover with foil.
  5. Place in oven and cook for 1 1/2 hours.
  6. About twenty minutes before serving, cook pasta according to package directions.
  7. To serve, place the sausage and pepper mixture on the pasta.  Sprinkle the shredded parmesan cheese on top and enjoy!
Kielbasa Sausage and Peppers Pasta : The Chirping Moms
When I was pregnant, I discovered something called “pickle dip”.  Pregnant and pickles, of course, I enjoyed this fabulous dip.  I am sharing a “twist” on this dip turning it into a great creative lunch idea, the Ham and Pickle Rollup.  It’s so easy to make, but yet so mouthwatering!

Lunch Recipe:  Ham and Pickle Rollups

Ingredients:

  • 1 package of Hillshire Farm Honey Ham lunch meat
  • 1 package of tortillas
  • 1 8 ounce package of cream cheese, softened
  • 1 cup of chopped dill pickles
  • 1 tbsp. of worcestershire sauce
  • Pickle juice

Directions:

  1. Mix the cream cheese, chopped dill pickles, and worcestershire sauce together.  Add pickle juice, if desired.
  2. Spread the mixture onto a tortilla.
  3. Add 2-4 slices of Hillshire Farm Honey Ham lunch meat.
  4. Roll up and enjoy.
