Meal planning comes second nature to me as I am one of those people who likes to be organized & prepared for the busy week ahead.  Last winter, I started monthly meal planning & I loved it.  It’s efficient, organized, & makes grocery shopping so much easier.  But then spring came & life started to get crazy for us.  My husband took a new job & we bought a house across town.  Since the start of summer, we have been crazy busy traveling, settling into a new house, & adjusting to new schools and routines which means that we have been on a more day to day meal planning basis as we ended the year of 2015.  Trying to get organized over the winter break,  I sat down and planned out meals for the whole month of January.  All the meals are kid-friendly & can be modified to please even my pickiest eater.  Many of the weekday meals are simple to prepare.  With a husband that works late (especially in January, thanks to the busy season of accounting), I cook most meals with all three kids underfoot during the infamous witching house so I try to keep meals quick and easy.  I thought it would be fun to share the monthly meal plan with you all to help inspire & give you a full meal plan for the month.  You can modify as needed based on what is in your pantry, what is on sale at the store, & what you have planned for the week but no more searching cookbooks and Pinterest every night for something to make for dinner.
