An Easy Summer Crock Pot Recipe

Even though it’s mid summer & we don’t have air conditioning, I can’t seem to put my crock pot away. It’s the easiest way for me to get dinner made with my 2 wild little girls, so I have been trying to make some summer meals without always heading outside to grill. Crock pot pulled pork is an easy favorite. Now I have an easy crock pot chicken recipe, using some of the delicious vegetables growing in the garden. I serve it over whole wheat bow tie pasta, but it can be served over any pasta or rice. 

Summer Crock Pot Chicken

Ingredients:

Chicken

2 cans italian style diced tomatoes 

2 garlic cloves, chopped

Whole onion, quartered

1 zucchini

1 yellow summer squash

package of sliced mushrooms

chopped fresh tomatoes

Salt & pepper to taste

1 cup of water

2 tablespoons of olive oil

1 box of bow tie pasta (farfalle)

Directions:

Place all ingredients into the crock pot except for the pasta. Cook on low for 6-8 hours or on high for 4 hours. When you are ready for dinner, cook pasta according to box. Drain & toss with olive oil. While the pasta is cooking, take chicken out of the crock pot & dice or shred. Put chicken over the pasta, then vegetables & last some of the broth/sauce in the crock pot. Note: The vegetables get very soft. If you can, add them in half way through cooking the chicken instead of adding everything at once. I am all about saving time – so I always through everything in together. Enjoy!

    This looks so easy — will definitely have to make it over the weekend. It'll probably work with frozen chicken breasts? Also, should it be boneless or with bone in?
