Easy Nutribullet Pesto

Our best quarantine purchase was definitely our Nutribullet. We’ve used it daily since we got it for smoothies and making delicious, healthy ice pop creations this summer. We just got the basic one on Amazon (this one) and it’s super easy to use and clean. Our best quarantine project has been our vegetable garden… so how do the two go together: discovering I could create a Nutribullet pesto recipe. 

I used to love making fresh pesto…. back when I had no kids and a lot more time to cook dinner. I would bust out the food processor and make pesto often. Now I don’t even own a food processor and haven’t made fresh pesto in many, many years. But our basil plants started growing out of control and I didn’t know what to do so the delicious leaves didn’t go to waste. I figured I’d give the Nutribullet a try to make my old simple pesto recipe. It took minutes to make and was delicious! I used to to make pesto grilled tomato and cheese sandwiches. 

 

Then, to make sure the recipe wasn’t a fluke and that it really was easy… I wrote it down and had my 10 year old make it. She picked all the basil leaves from the garden and made my Nutribullet pesto recipe. It was just as delicious the 2nd time around. This time we used it on some farfalle pasta. 

This Nutribullet pesto recipe really takes minutes, start to finish and only requires 4 other ingredients besides for the fresh basil leaves. 

 

Nutribullet Pesto Recipe

INGREDIENTS
2 cups fresh basil leaves
1/2 grated Romano or Parmesan cheese 
1/2 cup extra virgin olive oil
1/3 cup pine nuts
3 garlic cloves, minced
salt & pepper to taste (optional)

DIRECTIONS:

Simply add all of the ingredients to the Nutribullet and combine. Enjoy!
