Greek Quinoa Salad: An Easy Recipe

This is one of my favorite  recipes. It’s easy and if I make it in the beginning of the week, it’s my lunch for a few days. I am terrible about remembering to make myself lunch and typically end up eating my kids sandwich crusts as I clean up their lunch. So when I have all the ingredients for this Greek quinoa salad, my lunch really takes a step up! Greek Quinoa Salad is also one of my go-to’s for something to bring to summer bbq’s and it’s my favorite summer side dish when we have chicken or fish on the grill.

There are not exact quantities for the add ins to the salad, because I pretty much cut the veggies as if I’m making a salad and instead of adding it into a bowl of lettuce, I add it into the bowl of quinoa. So if it’s an ingredient you love add more and if it’s an ingredient you don’t love, add less or skip it. Also, I don’t like onions but if you do, add them to the recipe too.  Enjoy!

Greek Quinoa Salad

Ingredients for Greek Quinoa Salad:

  1. 1 cup uncooked quinoa
  2. Feta cheese
  3. kalamata olives
  4.  1 cucumber diced
  5. peppers: green, red, orange, whatever kind you like, diced
  6. chickpeas
  7. tomato, diced or cheery tomatoes cut in half

Dressing Ingredients:

  1. pepper
  2. 3 tablespoons olive oil
  3. 2 tablespoons red wine vinegar
  4. 1 tablespoon lemon juice

Greek Quinoa Salad Directions:

Rinse and cook the quinoa according to package. Put the cooked quinoa in a bowl and add in the olives, diced cucumbers, peppers, chickpeas and tomatoes. Mix everything around. Next make the dressing. To save time, I add the ingredients for the dressing right into the bowl of quinoa/vegetables. You can also make the dressing in a separate container and add it on later. Once the dressing is added, mix again. Add in the feta cheese and mix one more time. Last, eat and enjoy!
