Quick and Easy Chicken Lo Mein Recipe

With the new year upon us, it’s the time of the year where everyone is making new resolutions.  This includes my husband & I.  Just like many other fellow parents, we are trying to take time to eat a little healthier & take care of our own bodies.  For me, I am training towards a half marathon & intentionally meal planning for the month with healthier home cooked meals for our family.  But as a busy parent, I need to plan meals for my family that are healthy but also super quick to make.  One thing that I tried out recently & have become a new favorite are the Eat Smart Gourmet Salad and Stir Fry Kits.  
These kits created by Eat Smart are a super fast, but flavorful, way to eat veggies every day & bring a healthy balanced meal to the dinner table.  Each kit is packed with five to seven delicious and beneficial super foods, including ingredients like kale, broccoli, brussel sprouts, quinoa, almonds, dried cranberries, & more.  I tried out the following five packages:
Sweet Kale Gourmet Vegetable Salad Kit
Ginger Bok Choy Gourmet Vegetable Salad Kit
Wild Greens & Vegetable Gourmet Salad Kit
Kale & Red Chard Stir Fry Kit
Shanghai Blend Stir Fry Kit 
The salad kits come with all of the delicious ingredients plus a dressing or cooking sauce.  They are super easy to prepare, just toss and serve.  I served each with a protein source, some bread, & fruit on the side.  A super easy way to help get a nutritious dinner on the table.  

One of my favorite Eat Smart products that I tried was the Shanghai Stir Fry Kit.  In the Shanghai Stir Fry Kit, there was a great mix of vegetables including: brussel sprouts, boo choy, kale, snow peas, & carrots as well as a hoisin stir fry sauce.  I modified the recipe on the back of the package to make this version of Chicken Lo Mein:

Quick & Easy Chicken Lo Mein




Ingredients:

  • Eat Smart Shanghai Blend Stir Fry Kit
  • 1 pound of Boneless Chicken Breast
  • Vegetable Oil
  • 8 ounces Cooked Spaghetti Noodles
  • Soy Sauce

Directions:

1.  Cut chicken breast into bite sized pieces.

2.  Heat 1 tbsp. of vegetable oil in a sauté pan over high heat for 30 seconds.  Cook the pieces of chicken breasts until fully cooked.

3.  Remove the chicken from the pan and set aside.
4.  Add 1 tsp. of vegetable oil to hot pan and sauté the Shanghai Blend stir fry vegetables for one minute.

5.  Add the sauce (included in the kit) to plan and continue cooking for one minute.
6.  Add chicken and cook together for one minute.

7.  Toss the cooked noodles and the chicken/vegetable blend together.  
8.  Add soy sauce to taste (just a little!) & serve warm.
