Sausage and Tortellini Soup

I think this is the PERFECT recipe to share with you all today.  Many of us, including myself, are hunkered down in our houses due to some freezing temperatures outside.  Nothing makes you feel cozier than a nice bowl of a warm, hearty soup and some fresh bread served on the side.  Today, I am sharing a new favorite soup in our house, Sausage and Tortellini Soup.

Sausage Tortellini Soup


Ingredients:

  • 1 pound sweet Italian sausage
  • 1 onion, chopped
  • 1/2 tsp. minced garlic
  • 5 cups beef stock
  • 1 cup water
  • 1 can diced tomatoes
  • 1 cup chopped carrots
  • 1 tsp. Italian seasoning
  • 1 8 oz. can of tomato sauce
  • 1 zucchini, chopped
  • 16 ounces of cheese tortellini


Directions:

1.  Crumble the sausage in a skillet pan and cook thoroughly until well browned.  Add the chopped onions and minced garlic and sauté for 3-5 more minutes.

2.  In the Crock-Pot, mix the beef stock, water, diced tomatoes, tomato sauce, carrots, and Italian seasoning.  Add the cooked sausage mixture and cook on low for 8-10 hours.

3.  About ten to twenty minutes before serving, add the cheese tortellini and chopped zucchini to the mixture.  Cook until tortellini is fully cooked.  Serve with some warm, toasty bread.
