Strawberry & Peach (Hidden Veggie) Smoothie

The weather is heating up there and that only means one thing in my house.  We trade in our mugs of hot cocoa and coffee for some refreshing & delicious smoothies!   Earlier this week, we had a simple “breakfast for dinner” or as many of you call it, brinner.  A nice plate of eggs, some easy to make sausage, and my kids’ choice of cinnamon toast or frozen waffles.  But there’s one thing that is missing?  Fruits and vegetables.  An easy way to make sure that they get their servings of BOTH fruit and vegetables is with the Strawberry & Peach (Hidden Veggie) Smoothie!

This recipe is perfect for little ones (and adults)!  Trust me, I had my serving right along with them.  It’s super easy to make & has two servings of fruit as well as a serving of vegetable in each cup.  You can modify the recipes based on what you have in the freezer or refrigerator.  For example, substitute kale for spinach.  Or frozen berries for frozen peaches.  Or a banana for strawberries.  Simple, easy, & it takes all of less than five minutes which is just how I cook with three hungry, begging kids under my feet!  So here’s what you need to make this delicious smoothie.  This makes about two big servings, which was enough for me & my two little boys.  But it’s easy to make more or less!

Strawberry & Peach (Hidden Veggie) Smoothie
Ingredients:
  • 3-6 Fresh strawberries
  • 8-12 Frozen Peach Slices
  • One packet of Carnation Instant Breakfast Essentials Powder
  • 1-2 Handfuls of spinach
  • 1/4-1/2 cup of Orange Juice (I just approximate)
  • 1/4-1/2 cup of Milk (Again, I just approximate it!)
  • 1/3 cup of vanilla yogurt
Directions:
Add all the ingredients into the blender.  (I usually add the frozen items in first just so they will get nice and blended at the bottom.)  Blend for around 30 seconds.  ENJOY! 

Trust me, it’s so easy that even my  five year old helps me with this recipe!
Now, my boys aren’t spinach eaters but you seriously can’t even taste the greens in the smoothie.  Anytime I can attempt to hide vegetables in my kids’ food without them noticing, I do it!  And my oldest son isn’t a big milk drinker as well so smoothies are an easy way to get a little extra calcium in his petite frame. I also throw a packet of Carnation Breakfast Essentials to again bring a little added nutritional punch to the smoothie.

    This is great! We have a lot of smoothies in our house too! And we love the carnation instant breakfast..I used to almost daily to beef up my little preemie triplets who are still underweight at three years old. They never notice the different taste! 🙂
